Delight your loved ones with this delicious creamy cake full of peaches. Not only is it an excellent summer dessert, but it is also healthy, as it contains plenty of quark (tvaroh) and very little sugar.

What will you need?

To prepare this delicious dessert, have ready:

  • 400 grams of quark (tvaroh)
  • 500 grams of apricots or peaches
  • 10 grams of vanilla sugar
  • 120 grams of butter
  • 1 teaspoon of baking powder
  • 2 eggs
  • 150 grams of sugar
  • 300 grams of flour
  • 1 pinch of salt

How to proceed?

Sift the flour into a bowl and add the baking powder to it. Then take the butter out of the fridge and, while it’s cold, cut it into the flour, add a pinch of salt and quickly work the mixture by hand into a firm dough. Then put it into the refrigerator.

Meanwhile prepare the filling. Mix the quark with the eggs, sugar and vanilla sugar. Mix everything well and set aside. Wash the fruit and cut each into halves. Remove the pit from each half and be careful to keep the fruit intact and not to lose too much juice unnecessarily. Slightly overripe fruit is also suitable for this recipe, so you can easily use it up this way.

Layering on the baking sheet

Take the dough out of the fridge and prepare a sharp grater. Grate half of the dough on it. Work quickly so the dough doesn’t start to melt. Line a baking sheet with parchment paper and put half of the grated dough on it. Then spread half of the prepared quark mixture over it and arrange the halves of peaches or apricots on top. Next comes the second half of the cream and the remaining grated dough on top of the fruit.

Baking

This way the dessert is ready to go into the oven. Preheat it to 180 degrees and bake for about 45 minutes – until the top of the dough turns nicely golden. If you have watery fruit, it may release a lot of juice. In that case, feel free to bake the dessert for a few more minutes. The sweet fruit juice will pleasantly caramelize and create a delicious crust. You can serve it as is or with a scoop of ice cream or whipped cream. It tastes wonderful!
