In recent years it has become an increasingly popular part of our diets also in the form of carrot juice, salads or spreads. Carrots contain a large number of various health-promoting substances. They stand out above all for their high content of beta-carotene, or provitamin A, but also contain a large amount of fiber and antioxidants. Among other vitamins in carrots we find vitamin C, B-group vitamins and vitamin E. Besides vitamins, they are also rich in minerals, especially calcium, magnesium, potassium, sodium, phosphorus and iron.
Carrot and eyesight
Carrots are especially known for being very beneficial for our eyes thanks to their content of provitamin A. Experts recommend consuming raw carrots or drinking carrot juice particularly for older people, because regular consumption reduces the risk of developing cataracts and night blindness. Besides carrots, other red-orange colored foods such as pomegranates, pumpkins or melons also have a high vitamin A content.
Carrot as a great source of antioxidants
The carotenoids present in carrots also act as antioxidants, helping to remove free radicals from our body, protect cells from damage and reduce inflammation. Foods rich in antioxidants are essential for good health, slow the aging process and may help in preventing cancer or cardiovascular diseases.
Carrot and cancer
Tumor diseases are among the most common illnesses of today and every year many millions of people die from various types of cancer. There are many kinds of cancers because tumors can arise in all tissues of our body, but they most often occur where rapid cell proliferation naturally takes place, for example in the digestive tract, the respiratory tract and in places stimulated by hormones. Cancer is most often fought with medication and chemotherapy, but some foods rich in antioxidants and certain vitamins also have positive effects in the fight against this disease, one of them being the carrot. Increased consumption of carrots is recommended as a complement to conventional treatment, because the substances they contain, especially vitamins A, C and B6, help kill cancer cells and thus prevent further growth and spread of cancer.
