Preparation procedure

  • Preparing the starter: Add the sugar to the lukewarm milk and grate in the fresh yeast. Mix and let rise for 15 minutes.
  • Preparing the dough: In a bowl, mix the flour with the sugar. Add the risen starter, the cold butter cut into cubes, and work the dough. Finally add the egg and knead the dough until smooth. Do not mix for too long so the dough does not lose its flakiness. Divide the dough into three equal parts, wrap them in plastic wrap and let rest in the refrigerator for 20 minutes.
  • Layering: Roll out each piece of dough on baking paper to the size of the baking sheet. Trim off the excess edges. Grease the baking sheet with butter and dust with flour. Transfer the first sheet of dough onto the sheet, remove the paper and prick the dough with a fork. Mix the ground nuts with the sugar and divide the mixture into two parts. Spread half of the jam on the first sheet of dough and sprinkle with half of the nut mixture. Repeat the procedure with the second sheet of dough. Cover with the third sheet of dough, press lightly and prick again with a fork.
  • Baking: Bake in a preheated oven at 180 °C for approximately 25 minutes, until the surface of the dough turns golden. Let the baked cake cool at room temperature.
  • Glaze: Melt the chocolate and butter in a water bath and stir until smooth. Brush the cooled cake with the glaze and spread it evenly. Place the cake in the refrigerator overnight so that all the layers set perfectly.
