Preparation procedure

  • Crumble the yeast into the lukewarm milk and add 1 teaspoon of sugar. Stir and let stand for 5–10 minutes until a foam forms on the surface.
  • Sift the flour into a large bowl, add the salt, egg, vanilla and melted butter. Pour in the yeast mixture and work into a smooth, elastic dough. Knead for at least 8–10 minutes, by hand or with a mixer.
  • Cover the dough with a cloth and let it rise in a warm place for about 60 minutes, until it has doubled in size.
  • Briefly punch down the risen dough and divide it into the desired number of pieces. Shape into rolls, pastries or prepare a sheet for a strudel.
  • Place the shaped dough on a baking sheet lined with parchment paper, cover and let rise for another 20–30 minutes.
  • Brush with the beaten egg and bake in a preheated oven at 180 °C for about 15–20 minutes, until the pastry is golden and sounds hollow when tapped.
