This simple dinner will surprise you with its taste and speed of preparation. Grated potatoes, ham, spring onion and egg will create a combination that’s simply irresistible. The result is a light, crispy dish that you can make in a few minutes, and it will also please the whole family.

  • Preparation of the potatoes: Peel the potatoes and coarsely grate them, ideally using a peeler. Place the grated potatoes into cold water and let them stand for a few minutes to wash out the starch.
  • Basic mixture: Meanwhile, chop the ham and spring onion. Separate the eggs into yolks and whites. Set the yolks aside in a bowl and coat them with a little oil so they don't dry out.
  • Draining and mixing: Drain the potatoes, squeeze out the excess water thoroughly and mix with the chopped ham, onion, egg whites (2–3 are enough as needed), flour, salt and pepper.
  • Frying: Heat oil in a pan. Form patties from the potato mixture and make a hole in the center of each. Fry briefly on one side.
  • Adding the yolk: Place the prepared yolk in the center and either: cover and bake only from the bottom if you want a runny yolk, or flip and fry on the other side if you prefer a firmer consistency.
