This retro cream, which I learned to prepare back in the former regime, is a great base for many variations of Christmas cookies. Thanks to real butter and a delicate texture, it is ideal for sandwiched pastries, wasp nests, filled chocolate wafer rolls, roulades, or nut cookies. Once you learn to prepare this cream, you will be able to create various tasty variations that will please every lover of sweets.

Ingredients

Basic buttercream:

Chocolate cream:

Nut cream:

Preparation procedure

  • Preparation of the basic buttercream: Mix the milk with the flour and bring to a boil. Cook for about 1 minute, until the mixture thickens, then remove it from the heat and let it cool. It will form a thick paste. Beat the softened butter with the powdered sugar until fluffy, then add the rum. Gradually and carefully fold in the cooled milk mixture until a smooth cream forms. Chill the cream in the refrigerator to firm up so it will be easier to work with when filling the cookies.
  • Preparation of the chocolate cream: As with the basic cream, prepare the milk mixture (milk with flour). Beat the softened butter with the sugar and rum. Add 50 g of melted chocolate (milk or dark to taste) to the finished cream. Let it firm up in the fridge and use it to fill chocolate confections.
  • Preparation of the nut cream: For this variant cream, add 5 tablespoons of finely ground nuts (walnuts, almonds, or hazelnuts). You can also add the nuts to the cream in the final mixing phase, or use them as a decoration for the pastries. You can also add other ingredients to the cream to taste, e.g. coconut, chocolate chips, or candied fruit.

Preparation time

  • Active preparation: 30 minutes
  • Chilling: 2-3 hours

Number of servings

  • 20-25 servings (depends on the size of the cookies)

Each type of cream has its own character and allows a wide range of variations that will liven up your Christmas cookies.
