The fluffiest yeast kolaches with quark, poppy seeds and fruit are among classic homemade pastries that delight with their moistness and rich filling. Preparation procedure

  • Crumble the yeast into a portion of the lukewarm milk, add a tablespoon of sugar and a teaspoon of flour. Stir and let rise for 10–15 minutes until foam forms.
  • Put the flour, sugar, vanilla sugar, salt, egg yolks and lemon zest into a bowl. Add the sponge and the rest of the milk. Gradually work in the melted cooled butter and knead a smooth, soft dough. Knead for about 8–10 minutes by hand or 5–6 minutes in a stand mixer. Cover and let rise for about 40 minutes.
  • Turn the risen dough onto a lightly floured surface. Divide into 6 parts and each into 3 smaller pieces, making approximately 18 rolls in total. Shape into smooth rounds, transfer them to a baking sheet lined with parchment paper and let rise for another 20 minutes.
  • Use the bottom of a glass or cup to press an indentation into the center of each roll. Fill with the quark and poppy-seed fillings, add pieces of fruit or jam. Sprinkle with the streusel.
  • Bake in a preheated oven at 180 °C for approximately 18–22 minutes, until the rolls are nicely golden.
  • While still hot, brush the rolls with the melted butter mixed with rum. Let cool on a wire rack.

Tips for best results

  • The dough is intentionally softer, do not add extra flour

  • Let the poppy-seed filling cool before filling

  • Dry juicy fruit beforehand or lightly sprinkle the indentation with breadcrumbs

  • The rolls are best on the day of baking, but remain moist even the next day
