Preparation procedure

  • Preparing the dough In a saucepan, heat the milk and butter until the butter melts. Let the mixture cool slightly. To the lukewarm mixture add a teaspoon of sugar and the yeast, mix well and let rest for 10 minutes. Then gradually add the flour, sugar and a pinch of salt. Work into a smooth and elastic dough. Cover the dough with a cloth and let it rise in a warm place until it doubles in size (approx. 1 hour).
  • Preparing the filling Mix the poppy seeds with the sugar, pour in the hot milk and mix thoroughly. Let the mixture cool, then add the grated lemon zest and mix again.
  • Shaping the strudel Turn the risen dough out onto a floured work surface and roll it into a thin rectangle. Spread the poppy seed filling evenly and carefully roll up the dough. Let the roll rest for 20–30 minutes in a warm place.
  • Baking Beat the egg yolk with a little milk and brush the surface of the strudel. Bake in a preheated oven at 180 °C for about 30 minutes, until the strudel is nicely golden.
