  • Preparation of the sugar syrup – Pour the sugar into a pot with a thick bottom and cover with water. Simmer over low heat without stirring until the syrup reaches 120 °C. If you don't have a thermometer, you can use a fork – the syrup should slowly drip and form a thin line.
  • Whipping the yolks – Meanwhile, beat the yolks until smooth with a mixer.
  • Combining with the syrup – Once the syrup reaches the correct temperature, remove it from the heat and let it sit for half a minute. Then, while continuing to whisk, pour it in a thin stream into the yolks. Whisk until the mixture cools and thickens.
  • Gradual addition of butter – Gradually add the butter cut into cubes to the whipped mixture, beating in each portion thoroughly.
  • Flavoring – If you want to flavor the cream, add vanilla extract, coffee extract or melted chocolate and mix well.
  • Finishing – The finished cream is ready to use immediately. If it's too runny, simply leave it in the fridge for a while to firm up.
