- Make a yeast starter from the yeast, a little milk and a teaspoon of sugar according to your usual method.
- Sift the flour into a bowl, add the remaining ingredients including the risen starter and work into a smooth dough, then place it in a warm spot to rise for about 40 minutes.
- Grease the muffin tin with oil, fill with the dough and brush the top of each muffin with the beaten egg.
- Place in an oven preheated to 180 ◦C and bake for about 15 minutes.
