- First wash the zucchini and grate it on a large grater
- Carefully remove the excess water from the zucchini
- Transfer it into a large deep bowl
- Thoroughly mix in the eggs, salt, pepper, and parsley
- Finally add the flour and knead the mixture thoroughly
- Pour the finished mixture onto a baking sheet lined with parchment paper
- Bake for approximately 15–20 minutes at 180 degrees
- During baking, chop the onion and lightly sauté it in a pan
- Then add the already salted and peppered minced meat to it
- When the dough is baked, fill it with the minced meat, then sprinkle with grated cheese
- Carefully roll up the pancake
- Let the finished roll bake for another 10 minutes, cut and serve
