- If you decorate the gingerbread with a sweet icing, 100 g of sugar is more than enough; in the original recipe there is up to 200 g, but that seemed too much to me. In any case, I'll leave it to your taste.
- Put the flour, sifted sugar, baking soda, and gingerbread spice into a bowl. Mix everything, add the melted lukewarm butter, egg yolks, honey and milk and knead the dough. If it still crumbles, add a little more milk. It doesn't need to be left to rest in the refrigerator; you can roll it out immediately into a sheet about 0,5 cm thick and cut out shapes. If you want, you can decorate the gingerbread for example with a piece of walnut.
- Bake at 170 ° C for about 10 minutes. Immediately brush the baked gingerbread with a yolk mixed with 1 tablespoon of water. Decorate with egg-white icing.
