A simple quark cake with cocoa batter is a popular dessert that impresses with its flavor and easy preparation. Preparation procedure

  • Whip the egg whites with a small portion of the powdered sugar into stiff peaks and set aside.
  • Beat the softened fat with the remaining powdered sugar, vanilla sugar and rum into a light, fluffy cream. Gradually beat in the yolks and milk until the mixture is smooth.
  • Into the beaten mixture, alternately fold in the sifted flour mixed with baking powder and the egg white foam by hand. Stir gently so the batter remains airy.
  • Thoroughly mix all the ingredients for the filling or briefly whip them into a smooth cream.
  • Grease and flour a baking sheet about 30 × 40 cm. Spread half of the light batter. Evenly spread the quark filling on it. Mix the cocoa into the remaining batter and spread the cocoa batter over the quark layer.
  • Bake in an oven preheated to 170 °C for approximately 40 minutes. After baking, let the cake cool and then lightly dust it with powdered sugar.

Tips for the best result

  • The quark should be really soft, ideally wrapped in foil

  • Cut the cake only after it has completely cooled; the slices will be clean

  • For a milder flavor, part of the cocoa can be replaced with good-quality chocolate

  • The cake is also excellent the next day, when the flavors have melded even more
