  • Pour the all-purpose flour into a bowl, add the egg yolks, powdered sugar, sour cream, rum and a pinch of salt. Work everything into a smooth, non-sticky dough. Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
  • Roll the rested dough into a very thin sheet. The thinner the dough, the more delicate the angel wings will be. Using a pastry wheel or knife, cut the dough into rectangles or diamonds. Make a small slit in the center of each piece.
  • Heat the oil or lard in a deeper pan or pot. Fry the angel wings on both sides until golden; frying takes only a short time. After removing them, let them drain on paper towels to remove excess fat.
  • While still warm, generously sprinkle the angel wings with powdered sugar and let them cool slightly.
