Preparation procedure
- Cut the meat into cubes about 2 × 2 cm in size. Salt the meat and let it rest until the next day.
- Then layer it into clean jars. The meat needs to be pressed down in the jars as much as possible (so that as little air as possible remains in the jar)
- The meat should reach 2 cm below the rim of the jar. Fill each jar with 3-4 tablespoons of water and then seal well with lids.
- Place the jars into a canning pot, add lukewarm water and gradually bring to a boil.
- Sterilize at 98 degrees for 90 minutes.
- Let cool until the next day.
- The next day sterilize again – again at 98 degrees for 90 minutes.
- Let cool and store like other preserves.
