This recipe is proof that even simple ingredients can create a dish the whole family will fall in love with. It goes well with meat, fish, but also stands on its own as a light vegetable dish.

Roasted carrots can surprise even those who usually consider them just an ordinary side dish. In the oven their natural sweetness is beautifully intensified, the surface lightly caramelizes and combined with garlic, herbs and olive oil creating an incredibly tasty and fragrant side dish that easily competes with classic fries.

Preparation procedure

  • Preheat the oven to 200 °C (fan 180 °C). Peel the carrots and cut into equally sized batons or lengthwise pieces so they roast evenly.
  • In a bowl, mix the carrots with the olive oil, garlic, thyme, sweet paprika, salt and pepper. Mix everything thoroughly so each carrot piece is coated in the seasoned mixture.
  • Spread the carrots onto a baking sheet lined with parchment paper in a single layer. Leave small gaps between the pieces – this way you'll get a slightly crispy surface and prevent steaming.
  • Roast for about 25–30 minutes. After 15 minutes turn or stir the carrots so they brown evenly on all sides. The carrots should be tender inside and lightly golden on the surface.
  • Remove the finished carrots from the oven, sprinkle with chopped parsley leaves and lightly drizzle with lemon juice to taste. If you want a more pronounced flavor, you can sprinkle a little Parmesan over them while still hot.

Tips and variations

Instead of thyme you can use rosemary or sage. For a spicier version add a pinch of chili flakes. If you like sweeter notes, you can add a small amount of honey or maple syrup before roasting.
