Preparation procedure

  • Preparing the starter: Make the starter from the yeast, sugar and lukewarm milk. Let it rise for about 10 minutes, until it starts to bubble.
  • Preparing the dough: In a bowl, use a wooden spoon to cream the softened butter with the baking powder, vanilla sugar, egg yolks and sugar. Add the flour and salt to the bowl, and finally fold in the starter. Add the lemon zest and the cream, which we whipped from 250 ml of cream. Mix the dough thoroughly until it comes together into a smooth mass.
  • Proofing the dough: Cover the dough with a towel and let it rise in a warm place for about 45 minutes, until it doubles in size.
  • Shaping the kolaches: After rising, roll the dough into a sheet about ½ cm thick. Cut it into squares and place a teaspoon of filling into the center of each. Then roll each square into a ball and place on a greased baking sheet, seam side down.
  • Finishing the kolaches: Make a depression in the center of each ball and brush it with beaten egg. Then spoon the chosen filling (poppy seed, plum jam, quark or nut) into the depression. Let the kolaches rest for another 15 minutes before the oven heats up.
  • Baking: Preheat the oven to 180 °C and bake the kolaches for about 20 minutes, until they are nicely golden.
