Forget heavy and greasy langos! This recipe for bubbly yeast-free langos comes from Croatia and is perfect for summer days. The dough is ultra-light, full of bubbles, and doesn’t absorb oil at all, and the finished langos taste simply heavenly. Ideal as a quick dinner or a treat for a garden party.

  • Dough base: Place the yogurt, salt, sugar and baking soda into a large bowl. Mix everything well so the ingredients combine.
  • Gradually add the all-purpose flour and work into a smooth, non-sticky dough. It's best done by hand or with a stand mixer fitted with a dough hook.
  • Shaping the dough: Shape the dough into a rough log and divide it into equal portions. From each piece, form a small roll. Cover with cling film and let rest for 5 minutes.
  • Roll each roll out into a thin flatbread, approximately the size of the pan.
  • Frying: Heat a generous amount of oil in a pan. Fry the langos on both sides until golden. Each piece will puff up nicely while frying and form the typical bubbles.
  • After frying, let them drain on paper towels to remove excess fat.
