Preparation procedure

  • Dough preparation: Separate the egg whites from the yolks. Add the water to the egg whites and whisk them into stiff peaks. Add half of the sugar, whisk again and add the rest of the sugar together with the vanilla sugar. Whisk thoroughly. Add the yolks one at a time and gently whisk each time. Then gradually fold in the flour mixed with the baking powder. Pour the batter onto a baking tray greased with butter and floured. Bake at 170°C until golden (approximately 25 minutes).
  • Filling preparation: Let the biscuits crumble into smaller pieces and mix them with the jarred apricots, which you press through a sieve or blend. Add the cocoa, rum and nuts. Mix everything well and spread evenly over the cooled cake.
  • Cream filling preparation: Bring the milk to a boil in a pot and add the sugar and vanilla sugar. Mix the Zlaté klasy into the remaining milk and pour it into the boiling milk. Cook until a thick porridge forms. Cover with a lid and let it cool. Add softened butter to the cooled cream and mix thoroughly until you have a smooth and fluffy cream.
  • Assembling the slices: Spread the prepared creamy layer over the biscuits with the filling. Smooth it out and let it set for a while.
  • Glaze preparation: Melt the chocolate and Cery in a water bath. Add a drop of oil so the glaze gains shine. Let it cool for a while and spread it over the prepared cream.
  • Setting and serving: Let the Balkan slices set in the refrigerator. Then cut them into smaller slices and serve.
