Preparation procedure

  • Preparing the base: Preheat the oven to 180 °C. Prepare a baking tray or pan (approx. 20×20 cm) lined with baking paper. Whip the egg whites to stiff peaks. Beat the yolks with the vanilla sugar and essence until foamy. Gently fold the yolk mixture into the egg whites. Add the ground nuts and baking powder, mix in carefully. Pour the batter into the pan, smooth the top and bake for about 10 minutes until golden. Let the base cool.
  • Preparing the cream: Finely crush the Raffaello balls. Whip the mascarpone, cream and crushed balls into a smooth and firm cream. Spread the cream evenly over the cooled base and smooth.
  • Finishing: Sprinkle the surface of the dessert with grated coconut. Let it rest in the refrigerator for at least 1–2 hours to allow the flavors to meld.
