Preparation procedure

  • Dough preparation: Roll out the puff pastry (or use a ready-made sheet) and cut into squares approximately 5 × 5 cm.
  • Filling: In a bowl, mix the curd cheese, half an egg, sugar, lemon zest and starch. Add the raisins that you previously soaked in rum to the mixture.
  • Filling the turnovers: Place a teaspoon of filling and a few raisins on each square. Bring the opposite corners together into the shape of a little pocket. Brush them with the remaining beaten egg.
  • Decoration and crumble: Put a small amount of plum jam and a bit of the remaining curd mixture on top of each pocket. Prepare the crumble by mixing the flour, powdered sugar and butter, and sprinkle over the turnovers.
  • Baking: Place the turnovers in a preheated oven at 180 °C and bake for about 17 minutes, until they turn golden.
