- Sift the all-purpose flour into a bowl, add the soft butter (if it's from the fridge, let it sit at room temperature for a while so it's easier to work with) and the quark.
- Work all the ingredients well until a smooth dough forms.
- Roll the dough into a thin sheet and cut into squares.
- Coat each square in the mixture of granulated and cinnamon sugar. Then fold each square in half, again in half, and coat once more in sugar.
- Place the pastries on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 180 °C for about 30 minutes, or until they achieve a beautiful golden color.
