The quark cream cake is one of the most popular desserts that were already prepared in our grandmothers’ days. You’ll fall in love with this airy cake with a delicate quark filling and a delicious meringue topping.

Preparation procedure

  • Dough preparation: Mix all ingredients for the dough and work into a soft dough. Wrap it in plastic wrap and let it rest in the refrigerator for 30 minutes.
  • Quark filling: Blend the quark, sugar, egg yolks, cream powder, oil, vanilla sugar, lemon juice and milk into a smooth mixture.
  • Baking: Roll out the dough to the size of the baking sheet so that it also covers the sides to a height of approximately 2 cm. Pour the prepared quark filling onto the dough and bake in a preheated oven at 180 °C for about 25–30 minutes, until the surface is firm to the touch.
  • Meringue layer: Whip the egg whites, gradually add the sugar and beat until stiff peaks form. Spread the meringue evenly over the baked cake and return it to the oven. Bake for another 10 minutes, until the meringue turns golden.
  • Finishing: After cooling, fine caramel drops will form on the surface. Cut into portions and serve.
