Preparation procedure

  • In a heavy-bottomed pot heat the water, milk, salt, sugar and butter. Bring to a boil and let the butter melt completely. Add the flour and stir vigorously until the dough starts to form a lump and a film forms on the bottom of the pot. Remove from the heat and let the dough cool for 10 minutes.
  • Remove from the heat and let the dough cool for 10 minutes. Then beat in one egg at a time, mixing well after each addition until a smooth dough forms. Beat the third egg with a fork and add it gradually until the dough is sufficiently elastic – it should slowly flow off the spatula and form a triangle.
  • Transfer the dough to a piping bag fitted with a star tip and chill in the refrigerator for 15 minutes. On a baking sheet lined with parchment paper, pipe rings with a diameter of 9 cm. Bake in a preheated oven at 190 °C for 30–35 minutes, until golden. Let the rings cool completely.
  • Cream preparation: In a bowl, combine the quark, powdered sugar and vanilla extract. Add the whipping cream and whip for about 3 minutes, until the cream becomes fluffy and light in texture. Transfer the cream to a piping bag fitted with a star tip.
  • Assembling the dessert: Cut each ring in half. Fill the bottom half with a layer of quark cream, then add a second layer and top with the upper half of the ring. You can dust the finished pudding rings with powdered sugar or decorate as desired.
