Preparation procedure

  • Prepare the starter: Crumble the yeast into a cup, add a tablespoon of sugar, half of the lukewarm milk and 3 tablespoons of flour. Stir and leave in a warm place to rise (approx. 10–15 minutes).
  • Knead the dough: Mix the flours, sugar and salt. Add the starter, eggs, the remaining milk and the melted butter. Work into a smooth dough and let it rise for about 45 minutes.
  • Poppy filling: Bring the milk to a boil in a saucepan, add the poppy seeds and, stirring constantly, add the sugar, gingerbread, vanilla sugar, lemon zest and cinnamon. Cook until thickened and let cool.
  • Shaping the pastries: Roll the risen dough into a sheet, cut it into squares (approx. 8 × 8 cm). Place a teaspoon of poppy filling in the center, fold the edges over and seal into a pastry shape. Place on a baking tray lined with parchment paper seam-side down.
  • Baking: Brush the pastries with beaten egg, sprinkle with the crumble and bake in a preheated oven at 180 °C for about 25–30 minutes until golden.
