Preparation procedure

  • Crumble the yeast into a bowl, sprinkle it with sugar and pour over the lukewarm milk. Stir briefly; there is no need to wait for the starter to rise. Immediately add the cream, egg yolks, both types of flour, salt and the softened butter or fat. First stir with a wooden spoon, then quickly work with your hands into a smooth, soft and pliable dough.
  • Roll out the no-rise dough immediately on a lightly floured surface into a sheet about 3–4 mm thick. Cut squares with a knife or pastry wheel.
  • In a bowl, mix the quark, egg yolk, rum, vanilla sugar, pudding powder and powdered sugar. Add the rinsed and dried raisins. The filling is thick and easy to work with.
  • Place a teaspoon of filling in the center of each square. Join the opposite corners into a turnover shape and press the edges well. Transfer the turnovers to a baking sheet lined with parchment paper.
  • Bake immediately, without rising and without brushing, in an oven preheated to 170 °C for about 18–22 minutes, until the turnovers are golden.
  • While still hot, lightly drizzle the turnovers with rum and immediately dust with powdered sugar. Let cool briefly on a rack.
