Return to childhood with traditional Parisian crescents that will enchant with their delicate flavor, crisp texture and irresistible vanilla cream. This classic dessert with nuts and chocolate will delight every sweet tooth and is ideal for a festive table as well as a casual coffee gathering. It requires a bit of patience, but the result is definitely worth it!

Preparation procedure

  • Preparation of the meringues: Whip the egg whites into stiff peaks. Gradually beat in the powdered sugar. Then gently fold in the ground nuts and breadcrumbs to form a thick mixture. Transfer it to a piping bag fitted with a tip and pipe small crescents onto a baking sheet lined with parchment paper. Dry in an oven preheated to 150 °C for about 30 minutes – do not bake strongly, just dry them so they remain light and crisp.
  • Preparation of the cream: Mix the flour, egg yolks, vanilla sugar and milk until smooth and, stirring constantly, bring to a boil. Cook until a thick custard forms, cover with cling film and let cool. Meanwhile, beat the butter with the powdered sugar until fluffy and then combine with the cooled custard.
  • Filling the crescents: Put the cream into a piping bag fitted with a decorative tip and pipe it onto the cooled crescents. Leave in the refrigerator for at least 2–3 hours to allow the cream to set.
  • Glaze and finishing: Melt the chocolate with the oil in a bain-marie and stir until smooth. Dip the set crescents in the chocolate and allow to harden in a cool place.
