Preparation procedure

  • Sift the plain flour into a larger bowl and add the baking powder. Stir in the salt and sugar. Make a well in the center and pour in the lukewarm water and olive oil. Using a fork or whisk, start mixing from the center outwards until the ingredients come together.
  • As soon as the dough begins to come together, briefly knead it by hand directly in the bowl. The result should be a soft, smooth and slightly elastic dough that doesn't stick. If needed, add a tablespoon of water or a little flour. Cover the dough with a cloth and let it rest for 5 minutes.
  • Divide the dough into 4 equal parts. Shape each into a ball and flatten it with your hands or a rolling pin into a patty about 1 cm thick. It's fine if they're not perfectly regular — a rustic shape is desirable.
  • Heat a non-stick pan about 24 cm in diameter and lightly grease it with olive oil. Cook the flatbreads over medium heat for approximately 5–6 minutes on each side, until they turn golden and small bubbles form on the surface. If the bread darkens too quickly, reduce the heat slightly.
  • Keep the finished breads wrapped in a clean cloth to keep them soft. While still warm, you can lightly brush them with olive oil or butter.

Tips and variations

You can add chopped herbs, dried garlic or a little grated cheese to the dough. Part of the plain flour can be replaced with wholemeal for a more rustic flavor. If you want a stronger aroma, add a pinch of sweet paprika or caraway.
