- Put all dry ingredients into a bowl, stir, add the water and stir again, cover with plastic wrap and let rise for 12 hours.
- I make it in the evening and in the morning I turn it out onto the board, shape it a little into a loaf and let it rise for an hour.
- Meanwhile I preheat the oven to 230 and put a cast-iron pot in the oven to heat for half an hour.
- It can also be made of Jena glass but it must have a lid.
- Carefully transfer the risen dough on the baking paper into the hot pot or roasting pan, cover and bake for 30 minutes.
- Uncover and bake for another 20 minutes so a nice crispy crust forms, and it's done.
- Turn it out and brush it a little with cold water.
