This exceptional Duplo dessert not only tastes great, but also charms with its appearance. A delicate nutty base, fluffy vanilla cream and smooth chocolate glaze create a harmony of flavors that melts on the tongue. It looks like a patisserie cake, but you can prepare it easily at home – without special equipment and with commonly available ingredients.

Preparation procedure

  • Preparing the base: Mix the ground nuts with the flour. Separate the egg whites from the yolks, whisk the egg whites with a pinch of salt to stiff peaks. Gradually add the sugar and whisk thoroughly. Gently fold the flour-and-nut mixture into the egg whites. Transfer the batter into a tin (approx. 20 × 20 cm) lined with baking paper, grease the sides with oil. Bake at 170 °C for about 20 minutes.
  • Cream: Heat the milk. Whisk the egg yolks with the sugar and vanilla sugar, add the starch and one ladle of warm milk. Pour the mixture back into the milk and stir until thickened. Remove from the heat, add the butter and white chocolate, and let cool under cling film.
  • Assembling the dessert: Let the base cool and separate the edges from the tin. Insert a cake collar (optional). Whip the cream and fold it into the cooled cream. Spread the mixture over the base and smooth the surface.
  • Glaze: Melt the chocolate, cream and butter in a bain-marie. Spread the glaze over the surface of the dessert.
  • Chilling: Let the dessert rest in the fridge overnight. Then remove from the tin, if necessary remove the collar, sprinkle with nuts and cut into pieces.
