Jidáše are sweet leavened pastries with a deep tradition. They symbolize the rope on which, according to tradition, Judas hanged himself, and are meant to bring health and protection. They are served on Maundy Thursday brushed with honey – a sweet start to the Easter holidays.

Ingredients

Preparation procedure

  • Make a sponge from the yeast, a tablespoon of sugar and part of the lukewarm milk, and let it rise.
  • Put the flour, the remaining sugar, salt, vanilla sugar and egg into a bowl. Pour in the sponge, the butter and the remaining milk.
  • Work into a smooth dough and let it rise for 1 hour.
  • Form spirals, knots or twists from the dough. Let rise for another 15 minutes on the baking sheet.
  • Brush with beaten egg and bake at 180 °C for about 15 minutes.
  • While still warm, brush with honey.
