  • Wash the strawberries, dry them and remove the green parts.
  • Cut them in half, sprinkle with sugar and let them rest in a cool place for 24 hours.
  • Stir them a few times while they rest.
  • The strawberries will release juice, so don't be alarmed.
  • Before cooking, stir the citric acid into the strawberries.
  • If you divide the jam into several pots, the jam will cook faster.
  • Cook the jam until thickened.
  • Then pour the jam into one large pot, boil everything together briefly and stir, remove from the heat and the jam will finish cooking.
  • If it seems liquid to you, don't worry, the jam will gradually thicken.
  • Pour the hot jam into clean jars and seal them immediately.!
  • Turn the jars upside down and leave them inverted for 30 minutes, then turn them back. Tap the lid to check whether the lids are properly sealed. If some jars didn't seal correctly, replace the lid and sterilize the jam in a hot water bath.
  • Sterilize for 10 minutes at 90 degrees.

Compared to other recipes, this jam really has only a minimal amount of sugar and yet it is perfectly sweet and excellent.
