Homemade rolls like from the baker are a great recipe for fragrant, soft and at the same time crispy baked goods that even a beginner can bake. Preparation procedure

  • From 200 ml of lukewarm milk take a portion, add the sugar and crumble the yeast. Stir and let stand for 10–15 minutes until an active foam forms.
  • Sift the flour into a large bowl, add the salt, oil, the remaining milk and the prepared starter. Knead into a smooth, elastic dough that does not stick to the bowl. Cover the dough and let it rise in a warm place for about 45–60 minutes, until it doubles in size.
  • Divide the risen dough into smaller equal portions. From each form a ball, roll it out into an oval shape and roll it up from the wider end into the shape of a roll.
  • Place the rolls on a baking sheet lined with parchment paper. Let them proof briefly for another 10–15 minutes.
  • Lightly brush the rolls with oil or beaten egg and sprinkle with sesame, caraway or poppy seeds.
  • Bake in a preheated oven at 220 °C for approximately 10–12 minutes, until the rolls are golden and crispy.
  • After taking the rolls out of the oven, cover them for a few minutes with a clean damp cloth. This keeps them nicely soft even after they cool.

Tips for best results

  • The milk should be lukewarm, not hot, so the yeast works properly

  • For an extra crispy crust you can place a small dish of hot water in the oven

  • The rolls can be frozen after baking and later briefly reheated in the oven

  • You can add grated cheese, herbs or seeds to the dough
