A recipe for soft and crispy rolls that even a beginner can manage

Preparation procedure

  • Preparing the dough Sift the semi-coarse flour into a large bowl, add the crumbled yeast and mix. Make a well in the center and add the sugar, salt, melted butter and one egg. Gradually pour in the lukewarm milk and work into a smooth, elastic dough that does not stick to your hands.
  • Proofing the dough Cover the finished dough with a cloth and let it rise in a warm place for approximately 60 minutes, until it doubles in size.
  • Shaping the rolls After rising, divide the dough into smaller pieces and shape into rolls – classic braids, buns or elongated shapes. Transfer all pieces to a baking sheet lined with parchment paper and let them rise for another 10–15 minutes.
  • Baking Preheat the oven to 175 °C. Brush the rolls with the beaten egg and sprinkle with caraway seeds and coarse salt. Bake for 20 minutes, then increase the temperature to 200 °C and bake for another approx. 5 minutes, until they are nicely golden.
  • Cooling After baking, transfer the rolls to a wire rack and let them cool so they remain nicely crispy on the outside and soft on the inside.
