Preparation procedure
- Preparing the yeast starter: Stir the yeast into warm milk and add half a teaspoon of sugar and 2-3 tablespoons of flour. Let the starter rise for approximately 30-40 minutes.
- Preparing the dough: In a bowl, mix all the dry ingredients (flour, sugar and salt). Add the butter, sour cream and mix well. Incorporate the starter into the mixture and knead the dough. If the dough is too thin, add flour; if it is too stiff, add milk. Let the finished dough rest for 10-15 minutes, then knead again.
- Preparing the filling: Mix the quark, egg and sugar to form a smooth filling.
- Shaping the rolls: Roll the dough out to a thickness of 0.5-1 cm into a rectangle. Spread the quark filling evenly over the rolled-out dough. Roll the dough into a roulade and cut into approximately 20 rolls. Place the rolls on a baking sheet lined with parchment paper.
- Baking: Bake at 180-200 °C (depending on the oven) until the rolls turn golden. 5-7 minutes before the end of baking you can brush the rolls with a beaten egg for a nicer color.
- Cream glaze: Mix the cream with the sugar. After baking, pour the cream mixture over the rolls. Leave the rolls covered and uncover after they have cooled.
