Do you love traditional Czech buns? Try this tried-and-true recipe for homemade quark buns – soft, fragrant and filled with a rich quark filling with orange aroma and a splash of rum. These buns are perfect not only with coffee or tea, but also as a sweet breakfast or snack for the whole family.

Preparation procedure

  • Preparing the sponge: Crumble the yeast into the lukewarm milk, add the sugar and a tablespoon of flour. Stir and let sit for 10 minutes until a sponge forms.
  • Making the dough: Put the flour into a bowl, add a pinch of salt, the egg yolks, the melted butter and the prepared sponge. Knead into a smooth, non-sticky dough. Cover with a cloth and let rise for about 1 hour.
  • Quark filling: Mix the quark with the egg, sugar, orange-flavored sugar, grated zest and rum. The filling should be thick so it stays inside the bun.
  • Shaping the buns: Divide the risen dough into equally sized pieces, place a teaspoon of filling into each and shape into a bun. Arrange the buns on a baking tray lined with parchment paper, close to each other.
  • Rising and baking: Brush the buns with melted butter and let them rise for another 15 minutes. Bake in a preheated oven at 170 °C for about 30 minutes until golden.
  • Softening after baking: Right after taking them out, lightly spray the buns with water and cover with a clean cloth – they will remain beautifully soft.
