Preparation procedure

  • Preparing the batter In a clean bowl whisk the egg whites with the sugar until stiff peaks form. In another bowl mix the yolks, flour, cocoa, baking powder and water. Gently fold the egg white foam into this mixture. Divide the batter into two parts and spread each onto a baking sheet lined with parchment paper. Bake in a preheated oven at 180 °C for 10–12 minutes. Let cool.
  • Preparing the coating In a small saucepan over steam or in a water bath heat the water with the margarine, oil and broken chocolate until a smooth chocolate sauce forms.
  • Preparing the cream Mix the gelatin into 4 tablespoons of water and heat briefly to dissolve. Whip the cream until stiff and gently fold in the gelatin.
  • Layering the dessert Spread half of the cream evenly over the first sponge. Pour over some of the chocolate coating and place the second sponge on top. Spread the remaining cream over it.
  • Glaze In a water bath melt the chocolate, margarine and oil. Pour the glaze over the surface of the dessert and smooth with a spatula.
  • Chilling and serving Let the dessert chill in the refrigerator for at least 2 hours, ideally overnight, so the glaze and cream fully set. Cut into 10–12 portions with a sharp knife.
