  • Preparing the dough Cut the rolls into small cubes and place them in a large bowl. In another bowl beat the yolks with the milk, add the melted butter, salt, nutmeg, and the chopped parsley. Pour the mixture over the chopped rolls and mix lightly.
  • Whipping the egg whites Whip the egg whites until stiff and carefully fold them into the prepared mixture. Try not to compress the mixture too much so that it remains airy.
  • Shaping the dumplings From the mixture form two larger rolls or several smaller ones, which you tightly wrap in cling film. Tie the ends well and secure with string so the dumpling does not unwrap during cooking.
  • Cooking Place the dumplings into boiling water and cook for about 25–35 minutes depending on size. During cooking you can occasionally turn them so they cook evenly.
  • Serving After cooking, unwrap the dumplings from the film, brush with melted butter and let cool slightly. Cut with a sharp knife or with thread.
