  • Preparation of the egg-yolk cream In a little milk, whisk together the pudding powder and the yolks. Heat the remaining milk, pour the pudding mixture into it and cook until thickened. Remove from the heat, stir in the sugar, butter and vanilla essence. Cover with cling film and let cool.
  • Choux pastry Bring the water, salt and butter to a boil. Stir in the flour and mix until the dough no longer sticks and a white film forms on the bottom. Let it cool slightly and work the eggs in one at a time.
  • Shaping and baking Put the dough into a piping bag with a cut tip and pipe rings onto a baking sheet. Bake at 200 °C for about 20–30 minutes. Do not open the oven during baking! Then reduce to 160 °C and bake for another 10 minutes.
  • Assembling the choux rings Once cooled, slice the rings open and fill them with the egg-yolk cream. You can lightly dust the tops with powdered sugar.
