Ingredients: 480 g round sponge biscuits; 250 ml strong espresso (coffee); 4 teaspoons tuzemák (domestic rum); A few drops of almond extract; 500 g Lučina cheese; 4 tablespoons sifted powdered sugar; 250 ml whipped cream; 10 tablespoons egg liqueur; Cocoa for dusting; Toothpicks; Paper cups (optional)

Preparation procedure

Preparation of the coffee and cream: Brew a strong espresso and add the tuzemák (Czech rum) and a few drops of almond extract. Let the coffee cool while you prepare the cream. Put Lučina, powdered sugar and egg liqueur into a bowl. Beat everything thoroughly into a smooth cream. Then add the whipped cream, which you gently fold into the cheese mixture.
Assembling the bites: Arrange the biscuits on a tray with the flat side up. Using a coffee spoon, apply the cream to the biscuits. Place a second biscuit on each one, again with the flat side up, and press them lightly together. Stand the biscuits close to each other and drizzle them with the cooled coffee. For even drizzling a syringe (20 ml) has proven useful. After drizzling, we "flip" them to the other side and drizzle with the remaining coffee. Transfer the finished bites to a covered container and let them chill for at least 12 hours.
Final touches and serving: After 12 hours dust them with unsweetened cocoa using a sieve and stick a toothpick into the center of each bite. You can also place them into paper cups for an elegant look.
