Lentil soup is among the timeless classics of Czech cuisine, which never disappoint. It is hearty, nutritious, inexpensive and yet very easy to prepare. Thanks to the combination of lentils, potatoes, milk and cream, it has a beautifully creamy consistency and a gently tangy flavor that warms body and soul.

Preparation procedure

  • Thoroughly rinse the lentils and soak them for at least 1 hour in cold water. Peel the onion and garlic. Peel the potatoes and cut into small cubes.
  • Heat the oil in a pot and sauté the finely chopped onion until golden. Add the chopped garlic and briefly sauté to release its aroma.
  • Sprinkle in the plain flour and, stirring constantly, make a light roux. Add the sweet paprika, mix immediately and pour in about 300 ml of water. Whisk thoroughly so no lumps form.
  • Add the drained lentils and bay leaves to the pot and pour in approximately 1.2 liters of hot water. Bring to a boil and cook until the lentils begin to soften.
  • Once the lentils are almost tender, add the chopped potatoes and cook for another 10–15 minutes, until both the potatoes and lentils are soft.
  • In a bowl, mix the milk with the cream and pour into the soup. Simmer briefly over low heat so the flavors meld well.
  • Remove the soup from the heat and season with salt, ground black pepper and vinegar to taste. Remove the bay leaves.
