- Peel the potatoes and grate them finely. Squeeze out most of the starch and add the sauerkraut – it's good to cut it into smaller pieces.
- Add the potato starch, the egg yolk, season with salt and pepper, and mix everything well.
- You can make the pancakes in three ways – either bake them on a baking sheet lined with parchment paper.
- Cook on a non-stick pan with a thick bottom without oil – these two options are the healthiest.
- If you're afraid they might burn, just brush the pan with a little rapeseed oil and fry them on both sides until golden.
