Preparation procedure
- Dough preparation: In a bowl, mix the flour, sugar, butter, baking powder, egg yolk and cocoa. Work into a firm dough and divide it into two halves. Wrap both pieces in cling film and let rest in the fridge for 30 minutes.
- Preparation of the curd filling: Mix the curd with the powdered and vanilla sugar, add the egg yolks and mix thoroughly. For a fresh flavor you can add a little lemon zest. In another bowl, whisk the egg whites to stiff peaks and gently fold them into the curd mixture. This will make the filling smooth and airy.
- Assembling the cake: Prepare a baking tray and line it with parchment paper or grease it with butter. Grate half the dough over the bottom of the tray. Spread the curd filling evenly over the grated dough. Finally, grate the second half of the dough over the filling.
- Baking: Bake the cake in a preheated oven at 180 °C for 30 minutes, until nicely golden and the dough is cooked through.
