Baked buns made according to our grandmothers’ traditional recipe are among the most fragrant and most beloved homemade desserts. They are delicate, moist, beautifully fluffy and taste great not only fresh but also the next day. This tried-and-true recipe offers a versatile dough that you can fill as you like – they taste best with poppy seeds, plum jam, quark, nuts or jam. An ideal choice for weekend baking, a festive table or a sweet memory of childhood.

Preparation procedure

  • Preparing the starter Pour warm milk into a small bowl, add the sugar, crumble the yeast and stir in a little flour to form a porridge-like mixture. Let the starter rise in a warm place for 10–15 minutes.
  • Kneading the dough In a bowl mix the flour, sugar, salt, vanilla sugar and lemon zest. Add the risen starter, melted butter, egg and gradually pour in the warm milk. Work into a smooth, non-sticky and elastic dough. Well-kneaded dough will come away from your hand and won't tear. Cover with a cloth and let rise until doubled in volume (approx. 45–60 minutes).
  • Shaping the buns From the risen dough make 15 equally sized pieces. Flatten each into a patty shape, fill with your favorite filling and seal. Place the shaped buns seam-side down on a greased baking sheet. Brush with oil and let rise for another 10–15 minutes.
  • Baking Sprinkle the buns with powdered sugar and place into an oven preheated to 160 °C. Bake for approximately 30 minutes until golden. After baking let cool slightly and optionally dust with sugar again.
