Preparation procedure

  • Preparing the dough In a bowl, mix the quark, egg yolks, salt and starch. Gradually add the semolina and work it with your hands or a wooden spoon into a smooth, non-sticky dough. Let it rest for 10 minutes so the semolina can swell slightly.
  • Preparing the fruit Wash the fruit, pit the plums and apricots, and cut the strawberries in half if needed.
  • Shaping the dumplings Take smaller pieces of dough (approx. 60 g), shape them into patties, place one piece of fruit in the center of each patty and seal thoroughly. You will get about 12 dumplings.
  • Cooking Bring water to a boil in a large pot and salt it. Carefully add the dumplings one by one, stir so they don't stick to the bottom, and cook for 8 minutes from the moment they all float to the surface.
  • Serving Remove the cooked dumplings with a slotted spoon, let them drain and serve while still warm. You can dust them with powdered sugar, drizzle with melted butter, or coat them in toasted breadcrumbs.
