- Wash and peel the zucchini. If it has any seeds, feel free to scoop them out. However, if you have a young zucchini, you can leave the skin and the seeds. Cut the zucchini into small rounds, similar to how you cut potatoes.
- Pour oil into a pan and place it over low heat. Gradually put the zucchini into the heated oil and fry it until it is golden in color. However, don't fry it in the pan for too long, because the inside may become mushy.
- Wash the parsley and chop it finely. Press the garlic and blend or finely chop the walnuts with a knife. In a bowl, finally mix the parsley, garlic, nuts, salt, pepper and a little olive oil. Add the mixture to the zucchini and mix everything well.
