  • Dough In a bowl, mix the flour with the salted sugar, baking powder and a pinch of salt. Add the softened butter, the egg yolk and the sour cream and work quickly into a smooth dough. Wrap in cling film and chill for at least 15 min in the fridge.
  • Apple filling In a pot, heat the water with the sugar and butter. Add the apples and simmer for 5 minutes. Stir in the vanilla pudding and spices, briefly cook until thickened. Remove from the heat and let cool slightly.
  • Assembly and baking Grease and flour the pan (e.g. 24×24 cm). Roll out half the dough and transfer it to the bottom of the pan. Spread the apple filling and cover with the second layer of dough. Bake in an oven preheated to 180 °C (convection 160 °C) for 30–35 min, until the surface is golden.
  • Finishing After baking, let the cake rest for 10 min, then remove from the pan and let cool completely. You can dust with powdered sugar before slicing.
