Preparation procedure

  • Preparing the sponge Beat the eggs with the sugar and vanilla sugar until pale and fluffy. Pour in the milk and oil, whisk briefly. Fold in the flour mixed with the baking powder. Pour the smooth batter into a greased and floured pan about 30×20 cm in size. Bake in a preheated oven at 180 °C for approximately 25–30 minutes. Let cool.
  • Coconut cream Add the semolina, flour, coconut, sugar and vanilla sugar to the boiling milk. Cook, stirring constantly, until thickened. After cooling slightly, fold in the whipped cream or mascarpone. You will get a smooth and dense cream.
  • Assembling the cake Cut the sponge lengthwise. Spread half of the cream on the bottom layer, place the second layer on top and spread the remaining cream on the top. Sprinkle with grated coconut and, to taste, decorate with Raffaello or nuts.
  • Chilling Let the cake rest in the refrigerator for at least 2 hours, ideally overnight, so the flavors can meld.
