Preparation procedure

  • Filling: Briefly cook or sauté the spinach, let drain and chop finely. Cut the feta into small cubes. In a bowl, mix the spinach, feta, salt and pepper.
  • Egg mixture: In another bowl, mix the egg, milk, oil, water and salt – this will create a liquid mixture for brushing the pastry.
  • Preparing the pastry: Lay out the first sheet of filo pastry on the work surface and brush it with the egg mixture. Cover with the second sheet, brush again and place the third sheet on top. You will obtain a three-layer base.
  • Filling: Evenly spread the spinach-feta filling over the prepared pastry. Roll the pastry tightly into a log.
  • Shaping: Cut the roll diagonally into triangles (or sticks). Work quickly with the pastry so it doesn't dry out.
  • Baking: Transfer the triangles to a baking sheet lined with parchment paper. Brush them with the egg yolk and sprinkle with poppy seeds. Bake in an oven preheated to 180 °C for about 15 minutes, until golden.
