Preparation procedure

  • Preparing the starter In a bowl, mix the yeast, sugar, rye flour and warm milk. Let the starter rise for about 15–20 minutes.
  • Preparing the dough Sift the flour into a bowl, add the starter. Separately beat the yolks with the sugar until light and frothy (approx. 7 minutes) and add them to the flour. Heat the milk and butter until the butter melts, and pour into the dough in portions. Work well, finally incorporate the oil and optionally the spirits. Let the dough rise covered in a warm place for 60–90 minutes.
  • Shaping the doughnuts Roll out the risen dough and cut out circles (approx. 7 cm). If you are using jam, put it in the center and seal well. If you are filling with whipped cream, leave them empty. Let them rise for another 20 minutes.
  • Frying Fry the doughnuts in hot oil (approx. 180 °C) for 2–3 minutes on each side. Place them on a paper towel.
  • Preparing the glaze and filling Melt the chocolate in a bain-marie. Whip the cream with the sugar and stabilizer. Cut the doughnuts open, fill with whipped cream and dip the top into the chocolate.
